Blood Orange Slices with Balsamic Vinegar, Olive Oil, and Mint.

Are you ready for a mouth watering, taste bud tantalizing dish? This one takes the cake by far, its healthy, 100% nutritious, its simple, and delicious.

1. Take one blood orange, and grate off the thin/bitter outside layer, leaving as much of the orange peel as possible. (Did you know, that the orange peel has tons of phytonutrients and flavonoids which have anti-inflammatory properties? Its not a typical eating behavior in the US to consume the peel of citrus fruits, but in many other cultures, its a norm. The peel can aid digestion, help to relieve gastrointestinal problems such as acidity, heartburn, flatulence, diarrhea, aid in the digestion of fatty foods, and also help to fight cancer. It is rich in vitamins A and C, natural antioxidants which increase the immune system, fights infection, and helps to prevent colds and flu).

 2. Thinly slice the orange and place them on a plate.

 3. Drizzle 1:1 extra-virgin olive oil and balsamic vinegar on top.

 4. Lastly, chop up some fresh mint and sprinkle on top and serve.

If you are a cheese lover, this would be heavenly served on top of thinly sliced fresh mozzarella or crumbled goat cheese.
